The bold tannins of this blend perfectly match the protein in red meat to enhance flavors and sapidity and are smoothed out by the dish’s fat content. Pair with heavy, fattier, saltier, spicier steaks and stews of beef, game meat, and roasted lamb. Superb also with well-aged cheeses like Parmesan and Vintage Cheddar.
Winemaker’s Notes
Head Winemaker Brian Hosmer and his talented cellar team artfully craft our sustainably-grown fruit into an array of wines to charm every palate. Only carefully selected grapes for their concentrated flavors are used for our Proprietor's Reserve label. Each batch of grape varieties is separated during winemaking and aging. The final cuvée is decided shortly before bottling, resulting in a new expression of our winemakers' vision, a combination of intuition and in-depth knowledge that creates this drinkable work of art.

We recommend serving it at a room temperature of 65-68 °F.
Aging Potential
Our Trio has all the cards to be enjoyed in youth or long aging within your collection. An optimal cellaring (below 65 °F) will reward the patient drinker for up to 10+ years, gifting with an evolved profile over time.
