Food Pairing Notes
Our Cabernet Franc pairs well with a wide variety of foods due to its medium body and high acidity. The wine is well-suited to various food types, including rich, meaty, fatty foods, vinegar-based, and tomato-based dishes. The herbal undertones of this wine will enhance dishes with fresh herb seasonings. Classic pairings include:
- Pork roast, beef burgers, beef stew, meatballs in tomato sauce, turkey with cranberries, lamb gyros, lasagna Bolognese, roast duck, BBQ wings, venison, or grilled lamb.
- Various cheeses, such as feta, goat cheese, brie, and blue cheese
- Various vegetables, due to their herbaceous characteristics, including roasted red peppers, tomatoes stuffed with basil, eggplant, mushrooms, spinach, arugula, and beans.
- Food seasonings such as oregano, thyme, rosemary, sage, red pepper flakes, black pepper, or jalapeños will complement the taste of the wine.
Winemaker's Notes
Head Winemaker Brian Hosmer and his talented cellar team artfully craft our sustainably-grown fruit into an array of wines to charm every palate. Only carefully selected grapes for their concentrated flavors are used for our Proprietor's Reserve label. The grapes are fermented under submerged caps in small batches and longly aged in our oak barrels. The result is this noble red varietal.
Aging Potential
This wine has all the cards to be enjoyed in youth or long aging within your collection. An optimal cellaring (below 65 °F) will reward the patient drinker for up to 10+ years, gifting with an evolved profile over time.
