Food Pairing Notes
Looking for a delightful drink to serve at your next party? Look no further than our Tonight! This crisp and refreshing wine pairs perfectly with light dishes, as well as fresh or raw seafood like oysters, ceviche, and grilled fish. Its fruity flavors are balanced by a satisfying acidity that complements soft cheeses, cured meats, and fried appetizers. For an upscale brunch, consider serving it with quiches or salmon eggs Benedict. Be sure to serve well-chilled for the ultimate apéritif experience!
Winemaker’s notes
Head Winemaker Brian Hosmer and his talented cellar team artfully craft our sustainable growing fruit into an array of wines to charm every palate. According to the Blanc de Blancs style, our Tonight is a blend of our finest white grapes. After undergoing stainless fermentation, the blend continues on to undergo secondary Charmat fermentation, which is responsible for creating bubbles while also preserving the tangy fruity character.
Serving suggestions
Best served well-chilled at 43–50 °F. Do not decant. To fully appreciate its effervescence, we recommend serving it in sparkling wine glasses.
